Growing And Using Culinary Ginger (Zingiber officinale)

Ginger is a tropical perennial herb native to southeast Asia with fragrant rhizomes which has been cultivated since ancient times. Characterized by thick, branching rhizomes, stout, upright stems and pointed, lanceolate leaves, this herb can grow up to 5 feet tall in tropical environments. Ginger does well in rich, moist soil in part shade and high humidity. It can also be grown in pots by those who want to grow their own roots. Freshly dug ginger roots (green ginger) will keep several weeks in a cool, dry location. They may be juiced or eaten raw. or used in making soups, curries, and SE Asian stir fried recipes. Dried ginger is used to flavor cakes, cookies and sauces. Ginger extracts are also used to make ginger beer and ginger ale.
