Broiled and Soused Salmon With Fennel and Mint

Broil package of salmon slowly in pan on low heat with olive oil until fully thawed. Flip salmon fillets and splash with vinegar, slowly increasing heat.
Add freshly chopped fennel and peppermint leaves to salmon, continue to broil at low heat, turning periodically until filets are cooked thoroughly.
Serve with salad which includes fresh arugula, goat cheese and black olives.
